About
Red chilli powder from our own fields, with nothing added. Kashmiri chilli is the one cooks reach for when they want a dish to turn deep red without making it fiery.
Bloom it in hot oil or ghee for a few seconds before the rest goes in, so the colour runs into the dish — rogan josh, curries, dals and tadkas. Add it to marinades for tikka and tandoori dishes.
Keep it in an airtight jar away from light and heat, and always use a dry spoon. Light fades the colour and damp makes it clump.

Check it yourself
Chilli powder is sometimes coloured to look redder. One minute and a glass of water will catch the obvious cases.
Test 1
Sprinkle a pinch of powder on the surface of a glass of water. Don't stir.
Real: It floats for a while, then sinks slowly without much colour leaking out.
Fake: Bright red streaks run down into the water straight away.
Test 2
After a few minutes, rub a little of what settled at the bottom between your fingers.
Real: Soft, and it washes away.
Fake: Gritty, like sand or brick dust.
