Buying guide
Most honey on a supermarket shelf has been heated and fine-filtered so it stays clear and runny. That is what changes.
Strained, never heated. Keeps its enzymes and pollen, and crystallises naturally over time.
Heated and ultra-filtered so it stays liquid on the shelf. Clearer, but the enzymes are gone.
Honey from several countries mixed for a uniform taste and price. The origin on the label is usually vague.
Questions, answered
Raw honey crystallises naturally, and it is a sign it hasn't been heated or ultra-filtered. Stand the jar in warm (not hot) water and stir to make it runny again.
Strained to take out wax and bits of comb, but never heated or pasteurised, so the enzymes and pollen stay in.
Not before their first birthday. No honey — raw or processed — is safe for infants under one year.
At room temperature with the lid tight. It never needs the fridge, which only speeds up crystallisation.
