Buying guide
What sets a dry fruit apart is the variety and how it was dried, not the brand on the bag. Here is what to look for.
Boat-shaped kernels with high natural oil — richer and sweeter than commercial almonds.
Flat, uniform and cheaper. Bred for orchard yield rather than oil and flavour.
From fresh, well-dried nuts: pale gold, sweet and mild.
Older or over-dried nuts. Safe to eat but more bitter, and they turn rancid sooner.
Dried whole without sulphur, so they darken naturally and carry their own sugar bloom.
