About
Mamra is the almond variety Kashmir is known for: smaller and more curved than the everyday almond, with a richer, oilier bite. These are giri badam — shelled kernels — graded by hand and vacuum-sealed.
Eat them as they are by the handful, or soak them overnight and peel them in the morning. They also go into kheer, halwa and badam milk, or chopped over breakfast.
Keep them airtight, cool and dry. Once the pack is open in summer, move them to the fridge.
Airtight, cool and dry. Refrigerate after opening in summer.

Buying guide
What sets a dry fruit apart is the variety and how it was dried, not the brand on the bag. Here is what to look for.
Boat-shaped kernels with high natural oil — richer and sweeter than commercial almonds.
Flat, uniform and cheaper. Bred for orchard yield rather than oil and flavour.
From fresh, well-dried nuts: pale gold, sweet and mild.
Older or over-dried nuts. Safe to eat but more bitter, and they turn rancid sooner.
Dried whole without sulphur, so they darken naturally and carry their own sugar bloom.

Questions, answered
Mamra is a variety with a concave, boat-shaped kernel and a high natural oil content — richer and sweeter than the flat Californian almonds most shops sell.
Many people do: five or six almonds soaked overnight and peeled in the morning are easier to digest. They are equally good eaten as they are.
Airtight, somewhere cool and dark. In summer, the fridge keeps the oil from turning rancid.
Mamra trees yield far less than commercial orchards, and the kernels are sorted by hand. You are paying for the variety, not the packaging.
