About
Akhrot giri — walnut kernels already out of the shell. These are hand-sorted light halves from valley orchards, cold-stored so they keep their sweetness. They come in three grades: Brown, Classic and Premium.
Eat a handful as they are, or chop them into porridge, salads, brownies and halwa. A quick toast in a dry pan brings out their flavour.
Walnuts turn bitter when they are kept warm. Once the pack is open, keep them in an airtight container in the fridge. A sharp, paint-like smell means a kernel has gone off.
Refrigerate in an airtight container once opened; keeps its sweetness for months.

Buying guide
What sets a dry fruit apart is the variety and how it was dried, not the brand on the bag. Here is what to look for.
Boat-shaped kernels with high natural oil — richer and sweeter than commercial almonds.
Flat, uniform and cheaper. Bred for orchard yield rather than oil and flavour.
From fresh, well-dried nuts: pale gold, sweet and mild.
Older or over-dried nuts. Safe to eat but more bitter, and they turn rancid sooner.
Dried whole without sulphur, so they darken naturally and carry their own sugar bloom.
Questions, answered
Colour is the grade: light kernels come from the freshest, best-dried nuts and taste sweetest. Dark kernels are not spoiled, but can taste more bitter.
Walnuts carry a lot of oil, so they keep best in an airtight container in the fridge — up to six months — or in the freezer for longer.
A sharp, paint-like smell or a bitter taste means the oil has turned. Fresh kernels smell mild and nutty.

From the journal

Walnut kernels are graded by colour, and the nuts by how easily their shells crack. Here is what extra light, light and amber really mean, how Kagzi differs from Wonth, and how to keep walnuts fresh.
